Savory granola

And a talk about 10 steps to simplicity, in working and cooking


For the granola base

  • 1+1/4 cup oats
  • 1 Val Venosta Red Delicious Apple
  • 1 Tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1 garlic clove, peeled


  • 1 Tbsp sesame seeds
  • 1 Tbsp flaxseeds
  • 1 Tbsp pumpkin seeds
  • 1 Tbsp sunflower seeds


  • 1 tsp dried oregano
  • 1/2 tsp tumeric, powdered
  • 1/2 tsp sweet paprika, powdered


→ In a medium bowl mix oats seeds and spices.


→ Peel and dice the apple, then blend with olive oil and garlic until smooth.


→ Pour the apple sauce over the dry ingredients and stir to combine.


→ Put the granola mixture into a medium baking pan, lined with parchment paper. Bake at 160°C for about 45 minutes (or until golden-brown and crispy), stirring every 15-20min.


→ Let the granola cool down completely and store in an airtight jar up to 10 days.

1. Reducing is the first step: make less, make better. A savory granola is an easy recipe solving many meals: it’s a perfect topping for hummus or toasts.

2. Organizing: a complex systems is made of simple things, labeled and organised. Like your pantry.

3. Time-saving makes something look simpler. Meal prepping is a life saver.

4. Learning: the more you practice, the easier it gets. Follow the instructions.

5. Differences: the simpler your meal, the more you will appreciate the flavors in the granola. You can easily elevate basic dishes, like soup or a salad.

6. Context: what surrounds you plays a key role in your design. Keep your kitchen nice and tidy.

7. Emotion: make something that generates a sense of belonging. Like a family recipe.

8. Trust the process. Even when the batter is an unappealing sticky mix.

9. Failure is part of the process. We burnt the first batch of granola.

10. Meaning. Use whatever spices you have on hand. Just make sure to sprinkle some of this granola to make your weekly meals more special.
